High Protein, Low Sugar Oatmeal Chocolate Chip Cookies
Ingredients:
1 C LODI unbaked High Protein Lupin Flour
1/2 tsp baking soda
1/4 tsp Pink Himalayan Salt
1/2 C Coconut Oil
1 egg
1 tsp Vanilla extract
1/2 C Lakanto Monkfruit Sweetener
1/4 C Coconut Sugar
1 tsp baking soda
1 1/2 Bobs Red Mill Old Fashioned Oats
1 C Lilys Dark Chocolate Chips
Directions:
Preheat oven to 350 degrees. Line baking sheets with parchment paper.
Whisk together LODI unbaked flour, baking soda, and salt.
In a separate bowl mix together coconut oil, coconut sugar, and Lakanto monkfruit sweetener with an electric mixer.
Once combined, mix in egg and vanilla.
Slowly add the dry ingredients.
Once all ingredients are combined, add in the oats and chocolate chips
Cover and refrigerate for 1 hour.
Scoop onto baking sheets
Bake for 10 minutes
