-Mix together unsweetened coconut flakes, Cassava Flour, and Panko bread crumbs, salt, pepper, & chili lime seasoning . (You could do this gf, this is just what I had in my pantry)
-Beat an egg and put it in a separate dish
-Dip your mahi mahi in the egg then the coconut mixture
-Heat a cast iron skillet with avocado oil
-Pan Fry on each side for about 3-4
-Minutes, then cover for another 2 minutes.
The tortilla is a Siete Foods tortilla with a Jicama wrap inside. I added cabbage, cilantro, and watermelon radishes.
