5 Minute Carrot Cake Inulin Bites
I made these in the spirit of Easter. They are absolutely delicious and full of fiber! This recipe makes 8 balls!
Ingredients:
7 Pitted Dates
2/3 C of Cashews
1/3 C Shredded Carrots
3 Scoops of KOS Naturals Inulin
2 tsp Vanilla
2 tsp Coconut Flour
1/2 C coconut flakes or chips
Sprinkle of Nutmeg
Sprinkle of Pumpkin Spice
Directions:
Combine dates, cashews, and shredded carrots in a blender, I use my VitaMix. I just pulse the blender a few times. Put in a bowl with all other ingredients. Roll up into small balls and put them in the fridge. Snack on them all the time for a fiber filled snack!
