Healthy Banana Bread Recipe
Okay so I had some overripe bananas, so I had to put them to good use. I cut the loaf into tenths which gave me the following macros Protein: 8g Carbohydrates: 24g Fat: 13g. There are also 10g of sugar and 6g of fiber. Each slice only has 216 Calories.
Ingredients:
3 mashed bananas
2 eggs
1/4 C Almond Milk (Califia Farms)
1/4 C Pure Maple Syrup (Trader Joes)
1/2 Melted Coconut Oil (Thrive Market)
1 tsp Vanilla Extract

1/2 tsp Cinnamon
1 tsp Baking Soda
1/2 tsp Pink Himalayan Salt
1 Scoop Vital Farms Unflavored Collagen Peptides
Directions:
Pre-heat oven to 325F. Grease a 9x5 inch loaf pan with coconut oil and set aside.
Mash bananas with a fork and set aside.
In a medium bowl, whisk the protein flour, collagen peptides, cinnamon, baking soda and Pink Himalayan salt. Set aside.
In a large bowl, beat eggs, oil, maple syrup, almond milk and vanilla for 2 minutes. Stir in the bananas, flour mixture.
Pour batter into greased pan. Bake for 55 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes, slice and enjoy!
