Quick and Easy Fajita Bowl
I was in a hurry today, so u just threw this fajita bowl together in about 10 minutes. I don't have exact measurements for how much of each thing I used, but I can tell you what is in it, and how I put it all together.
First, I put mixed greens at the bottom of the bowl. I usually buy this salad mix from Trader Joes. This adds micronutrients and some volume to the bowl. I also used microwavable jasmine rice from Trader Joes. I always have this rice handy because it takes 3 minutes to make and is perfect when I'm in a hurry. When the rice was finished I added some Pink Himalayan Salt, cilantro, and juice from half of a lime. These add ins make a huge difference!
In a pan on medium heat I mixed "Just Chicken" from Trader Joes, pre chopped onions, bell peppers I chopped myself, and fajita seasoning. I did not add oil, but I did spray the pan.
I put this mixture on top of the rice and greens, added half a mini avocado, and a small spoon-full of heated canned black beans.
My bowl was complete with some green salsa!
This is a super easy and quick lunch idea, but can also be used as a meal prep idea.
