Cauliflower Gnocchi & Veggies
This lunch is super easy to make and took me about 10 minutes. First I cooked Trader Joe’s Cauliflower Gnocchi in the microwave according to directions. Then I put them in a pan with a little avocado oil. I chopped some zucchini and mushrooms and added them to the pan. After removing from the pan I added Trader Joe’s Vegan Kale & Cashew Pesto and some Organic Arugula.
