Veggie Spring Rolls
This is the perfect summer snack! Veggie spring rolls are incredibly easy to make and so delicious. I purchase rice paper wraps from Sprouts. You can put whatever you want in the rolls, but I used avocado, red cabbage, cucumber, carrots, and bell peppers.
First, I chop all of my veggies so that they are ready to go. Then, I fill a plate with warm water. I dip the rice paper in the water for about 5 seconds. I place the wet rice paper on a cutting board and fill it with my chopped veggies. After, I carefully wrap it, kind of like a burrito.
For my dipping sauce I use coconut aminos from Trader Joe's.
